Creamed Chicken and Biscuits

This was a very yummy dinner! It tasted a lot like chicken pot pie to us but it wasn't hard at all!!

1 small onion
1 1/2 tsp butter
2 lbs chicken breasts cooked and diced
1 can cream of chicken soup
1/2 cup mayo
1 cup milk
1/2 cup sauteed red bell pepper
1 cup frozen peas, thawed
1 1/2 cup shredded cheddar cheese
1 tube biscuits

Preheat oven to 350. Grease a 9 inch pan and set aside.
Chop the onion and red bell pepper. Melt the butter and saute the veggies until tender. Combine the cooked veggies, soup, chicken, peas, milk and mayo in a bowl and then pour into pan. Bake for 15 min. then remove from oven. Sprinkle 1 cup of cheese over baked mixture. Then arrange biscuits over top in a single layer and sprinkle remaining cheese over top. Return to oven and bake until biscuits are golden, about 20 min.
