My husband has been wanting to grill up a nice big steak for a while. We received a grill from a neighbor and couldn't wait to fire it up and use it. This past weekend we got us some nice big steaks and I decided they needed some potatoes on the side. I found this recipe a while ago and couldn't wait to give them a try. They did NOT disappoint and I will most definitely make them again. The grill added such a great flavor to them as well.So yummy and cheesy!!!
I found the original recipe from HERE but slightly changed it, my version is below
6 medium potatoes, peeled and cut into cubes
1 medium onion, chopped
grated Parmesan cheese
seasoned salt
pepper
butter
mozzarella cheese
cheddar cheese
The original recipe made one big foil pack using 3 potatoes, but I wanted to make a little more so I divided the potatoes into 3 different foil packs (2 potatoes in each pack)
Lay out big square of heavy duty foil and spray/grease. Place potatoes on top of foil. Then sprinkle remaining ingredients, except the cheeses, on top of the potatoes (I didn't measure my seasonings, just sprinkled what looked good to me). Then cut up pieces of butter and place on top of the potatoes ( I would say I used about 1 1/2 Tbsp of butter on each pack). Then fold up the foil packs tightly. Grill, covered, over medium heat for about 15-18 minutes on each side, or until they are tender. (we did about 16 min each side) Then sprinkle the cheeses on the packs and place back on the grill for the cheese to melt ( I was too impatient to place it back on the grill so we just sprinkled the cheese on top and closed the foil back up and it melted really well on the counter),
So YUMMY!!!!
