Parmesan Crusted Tilapia

I''m not a huge fish fan. The only "fish" I can tolerate is tuna (from the can) and fish sticks (but they don't really taste all that fishy....). My hubby on the other hand enjoys some fish! In trying to please him more and to broaden my views, I've been attempting to make a few fish dishes here and there, but so far the only type of fish I've used is Tilapia which isn't that fishy tasting so it works for me :) I actually enjoyed this dish and my girls even ate some.... maybe that had something to do with the flavored rice and broccoli we served it with though :) either way, I will make this fish dish again for sure!!

1 pound tilapia (I used 5 fillets)
1 cup grated Parmesan cheese
1 Tbsp paprika
1 Tbsp parsley
1 Tbsp olive oil
1/2 tsp salt
1/2 tsp pepper

Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and set aside.
Wash and pat dry tilapia. Mix Parmesan cheese, paprika, parsley, salt and pepper in a shallow dish. Brush the tilapia with oil on both sides then dip in the Parmesan mixture, patting the coating on. Then place on baking sheet. Take remaining Parmesan mixture and pat on top of all the coated fish. Bake for about 12 minutes until flaky.
