This recipe comes from my old neighbor. She was like my grandma and they were always there for our family when we needed them. Such great neighbors and lifetime friends! This is her crepe recipe. I love these crepes!! They are so sweet and divine!
3 eggs
1/2 cup milk
1/2 cup sugar
3 Tbsp. butter melted
3/4 cup flour
1/2 tsp salt
Combine all ingredients in blender and blend about 1 min. Scrape down sides with spatula and blend about 30 seconds more. Refrigerate for one hour. To cook, heat omelet, crepe, or regular frying pan on medium-high heat just hot enough to sizzle a drop of water. Brush lightly with melted butter. For each crepe, pour in just enough butter to cover bottom of pan, tipping and tilting pan to move batter quickly over bottom. Cook until done. (lightly brown)
** Fill with strawberry Cream Mixture(Below) or your choice of filling. Ideas include: brown sugar and syrup, strawberries, whip cream, jam, ect.
Strawberry Cream mixture:
1 container strawberry cream cheese (8 oz)
1 jar Marshmallow cream
1 small tub cool whip
Beat cream cheese and marshmallow cream together. Fold in cool whip. (Also makes a great fruit dip!)
