S'more Stuffed Cookies

I have a little obsession with S'mores :) I didn't realize I had an obsession until I was re-organizing my pinterest boards and had to create a board dedicated only to S'more's recipes :) LOVE THEM! when I saw these I couldn't WAIT to make them! They were so easy to throw together and taste really yummy! the only thing is that the "s'more" part really only sticks in the middle so the part around that ends up being a regular chocolate chip cookie, but it was still delish!!

Basically you will need a chocolate chip cookie dough recipe ( I used the one that she used to make sure I had similar results, but you probably could use whatever recipe you like ) and s'more supplies (graham crackers, marshmallows*, and chocolate)
*Marshmallows need to be cut in 1/2 length ways

Easy peasy! Here's the recipe I used!

For the cookie dough:
2 cups plus 2 tbsp all-purpose flour
½ tsp baking soda
½ tsp salt
12 tbsp unsalted butter, melted and cooled until warm
1 cup brown sugar, packed
½ cup granulated sugar
1 large egg plus 1 egg yolk
2 tsp vanilla extract
1 ½ cups semi-sweet chocolate chips


Whisk the flour, baking soda, and salt together in a medium bowl; set aside. In the bowl of a stand mixer fitted with the paddle attachment, or by hand, mix butter and sugars until thoroughly combined.  Beat in the egg, yolk, and vanilla until combined.  Add dry ingredients and beat at low-speed just until combined – the batter should look a little lumpy.  Stir in chocolate chips.
*side note: After I made this I honestly was a little worried because it looked runny and not like my normal cookie dough. But I let it sit for a min while I got everything else ready and as I scooped it out I was VERY surprised with the dough! it rolled really well and held a great shape! I think this dough was perfect for the s'more addition!!


Preheat oven to 325 degrees. Then line cookie sheets with parchment paper. Then assemble the cookies:
First start by making your S'more. I used one sheet of graham cracker and broke in half then placed a rectangle of chocolate on it and then my marshmallow halves then the other half of cracker. Sandwich the s’more between two large spoonfuls of cookie dough and using the remaining dough to wrap around each of the s’mores; the result should resemble a small cookie brick. I was only able to fit 2 on a sheet.  Bake for 20-24 minutes or until the tops and edges are lightly browned and the edges just lift off the pan with a spatula.  Watch them, I cooked mine a little too long I think. They won't look completely done but will set up as the sit on the pan. Let cool on pan about 5 minutes then transfer to a cooling rack to cool some more before serving.


SO YUMMY!!!!!  I only made 4 of the cookies into S'more cookies and just made the rest of the dough into regular chocolate chip cookies (cooking those ones for about 11-12 min though) ENJOY!! :)
