Giant Taco Shells

I found this on a local show's recipe page while surfing the internet at work. I couldn't wait to try them because I had never used giant shells before and I loved tacos. What a fun mix! I thought this was such a fun dish! It turned out yummy!!! I loved the giant shells and thought it was a creative way to serve dinner. So many possibilities to use those shells for!

16 jumbo pasta shells
3 cups ground meat
4 oz cream cheese (can use non fat)
1/2 package (about 2 Tbsp) taco seasoning
1 1/2 cups shredded Monterey Jack cheese
2 Cups chunky salsa
1 cup sour cream (Can use fat free)
cilantro, parley, chives, or green onions as garnish (optional)

Preheat oven to 375 degrees
Cook pasta shells according to package directions. Drain and rinse in cold water. Cover with cold water until ready to use.
While shells are cooking, cook meat til cooked through. Stir together softened cream cheese, seasoning mix, 1/2 cup shredded cheese, 1/4 cup salsa and 2 Tbsp water. Add meat and mix.
Spread 1 cup of salsa on bottom of a 9x13 pan. Drain shells; fill each with equal portions prepared meat mixture and place in pan. Spoon remaining salsa over shells. cover with foil and bake 15-20 min or until heated through. Remove cover and sprinkle with remaining cheese; continue to bake 5 more minutes to melt cheese. Serve with a dollop of sour cream and your choice of garnish.
