Philly CheeseSteaks

These are one of my husbands FAVORITE things to eat!!! He loves these and I love how easy they are to put together! I always serve these with homemade fries and a vegetable.

2 fresh Italian Sandwich rolls or Kaiser buns split in half crosswise (I just like to buy the ones in the deli section at Walmart. Personally we like the ones that are a little harder because the fluffy soft rolls absorb too much liquid and become soggy too fast)
1 white onion, thinly sliced
1 large green pepper thinly sliced
1 tsp minced garlic
½ tsp salt
1/4 tsp ground black pepper
½ pound rib eye steak, very very thinly shaved or sliced (Now, I went to buy the rib-eye steak from Smith's Deli and was actually told to buy a Flat Iron steak instead because it is fabulous with Philly Cheese steaks, so that is what I ALWAYS buy for these and then I have the people there cut the meat for me. It needs to be cut against the grain to keep the best flavor and to keep it tender)
1/3 pound thinly sliced white American cheese or Provolone Cheese

Heat a cast-iron skillet or griddle over medium heat. When hot add the oil, onions and bell peppers and cook stirring until caramelized (About 6 minutes). Add the garlic, salt and pepper and cook, stirring for 30 seconds. Push off to one side of pan. Add the meat to the hot pan and cook, stirring and breaking up with the back of 2 metal spatulas, until almost no longer pink. Mix in the sauteed vegetables. Top with cheese slices and melt. Then spoon mixture into sliced hoagies/bread and serve immediately.
