Mexican Lasagna

I first made these while I was in college and it was a big success! These are fun served with a Spanish rice and veggie.


1lb ground beef
1(16 oz) refried beans
1 pkg taco seasoning
12 uncooked lasagna noodles (I always buy Barilla's flat noodles that get cooked while baking, I know there is a great value version as well but they aren't flat)
2 ½ cups water
2 ½ cups salsa
2 cups sour cream
3/4 cup green onions
1 cup or 4 oz black olives
1 cup grated cheese

Combine beef, beans and taco seasoning. Place uncooked noodles on bottom of pan. Spread beef mixture over noodles. Top with more noodles and beef mixture. Combine water and salsa and pour over all. Cover with foil and bake at 350 for 1 ½ hours. Remove from oven and spread sour cream, onions, and olives on top. Top with cheese and bake 5 minutes more.
