Easy Beef Enchiladas

My Mom made these all the time!! I took this recipe to college and got rave reviews from everyone we cooked for! It is really simple but a little messy to create :)

1 ½ lb. ground beef, cooked, drained and seasoned
1 large can tomato soup
Shredded cheese
1 large can Rosarita (Red) mild enchilada sauce
Corn tortillas
Refried beans (optional)
Olives (optional)

Mix in bowl one can of tomato soup and one can Rosarita mild enchilada sauce. In 9x13 pan, pour a little sauce in bottom. Dip corn tortilla in soup sauce, then place in pan. Add seasoned ground beef and shredded cheese (beans and olives too if desired, which is how I love to make them). Roll up in a tortilla; continue with each tortilla. Cover top with sauce and cheese. Cover with foil and bake at 350 for about 40 to 50 minutes. Serve with lettuce, tomato, salsa, sour cream, and chopped olives.
