My new favorite side dish!!


I've been doing a new fitness/nutrition program called the 21 Day Fix. It provides nifty containers that are color coded to food groups (green container for veggies; purple container for fruit, yellow for carbs, etc).  The book goes through and calculates how many containers of each food group you get in a day. Pretty handy! It's been a fun thing to follow and learn.  I have been experimenting with new foods with this program and discovered how much I love sweet potatoes!! These sweet potatoes are a delicious side dish to chicken, steak, ground turkey.... anything. I eat them plain as a snack sometimes! Love them!!

Sweet potato
coconut oil
salt and pepper
garlic salt

Peel your potatoes and then dice them into small cubes (about 1/2 inch big). Put in microwave safe bowl and cover with lid and steam about 5-6 min until they are soft.  Heat your coconut oil in a frying pan ( I use about 1 tsp oil per potato), once its heated toss in your softened diced potatoes and seasoning (to your own taste). and fry up about 5 min, til brown and toasted. SOOOOO YUMMY!!!!! 

I've seen ideas to use cinnamon instead of S&P/garlic.... doesn't that sound like a yummy treat?! Can't wait to try those out!!
