Broccoli and cheese twice baked potatoes

I loved these! I loved that they had hidden veggies in it and that my girls ate them. These made a great side dish to our simple chicken.

4 medium russet potatoes
salt and pepper to taste
1 1/2 cups chopped fresh broccoli florets
2 cups chopped fresh cauliflower
1/2 cup low fat buttermilk
1 Tbsp green onions
1 cup shredded cheddar cheese

Bake potatoes in oven for 1 hour at 425.
In a medium saucepan combine cauliflower and broccoli with a little salted water and cook covered about 3 minutes. Remove the broccoli with a slotted spoon and set aside. Continue to cook Cauliflower until it is soft. Drain and set aside in a large bowl.
Preheat oven to 400.
Slice the potatoes lengthwise and scoop out the insides and put the insides into the bowl with the cooked cauliflower. Place the potato skins in a pan.
Mash the cauliflower and potato insides together with the butter milk and salt and pepper. then fold in the green onions and 1/2 cup of cheese. Spoon the mixture back into the potato shells and top with the cooked broccoli and remaining cheese. Bake in oven about 5-10 minutes until heated through and cheese is melted.
