We love the "Chicken Bacon Ranch" combo at our house and have made several things using these ingredients, from pizza to pasta and now these taquitos! These were delicious!!!! The recipe made a TON and I knew we wouldn't eat them all in time, so I ventured out and froze what we didn't eat and heated them up later and was very surprised at how delicious they were again! I love finding meals that freeze well and taste yummy!
I found this recipe at Six Sisters Stuff
1 (8 oz) package cream cheese, softened
12 slices of bacon, cooked and crumbled
4 cups cooked and shredded chicekn
1 packet dry ranch dressing mix
2 cups shredded Monterrey Jack Cheese
3-4 Tbsp green onion, chopped
20 (6 inch) flour tortillas (we used bigger ones)
salt
non stick cooking spray
Preheat oven to 425. Cover a large baking sheet with foil and spray with cooking spray.
Mix together the cream cheese, chicken, bacon, cheese, and green onions. Add in about 1/2 the dry ranch packet and mix then taste and add more according to your taste. Mix well. Spoon 2-3 Tbsp of the mixture into a tortilla and roll it up and place seam side down on the baking sheet. Repeat until mixture is gone (I ended up needing more than one pan). Then spray the tops of the taquitos with non stick cooking spray and sprinkle with salt. Bake for 15-20 min or until edges and tops are golden. Let cool a few minutes and serve. We liked dipping ours in ranch!
To Freeze: I prepared them according to the directions above and then flash froze them before baking them. Then I baked them like directed when I was ready. I did find that they were a little dry this way, so next time I think I will lower the temperature a little bit. But It was still super yummy and crunchy and tasted amazing dipped in ranch!!!
