I made this dessert yesterday for our Labor Day BBQ and Oh. My. Goodness. It was YUMMY!!! I love oreo's and cream cheese and cake so maybe I'm biased because this had ALL of that! :) It was a little more time consuming because the chocolate cake was made from scratch, but I would dare say it was worth it! It does make A LOT so make sure you aren't alone when you make this :) ha ha!
I found this recipe from Twopeasandtheirpod.com
For the Cake:
2 cups sugar
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
2 large eggs, lightly beaten
1/2 cup buttermilk
1 tsp. vanilla
1 cup unsalted butter
1/4 cup cocoa powder
1 cup hot water
1 cup chopped Oreo cookies
Frosting:
1 8 oz package cream cheese, at room temperature
1/2 cup butter
4 cups powder sugar
1 tsp vanilla
chopped oreos to top the cake with
Preheat oven to 350. Grease a sheet pan (an 11x17 jelly roll pan) and set aside.
In a large mixing bowl combine sugar, flour, baking soda, and salt. In a separate bowl, whisk together eggs buttermilk and vanilla. Set aside.
In a small sauce pan, melt the butter on medium-low heat. Whisk in the cocoa powder and hot water. Turn up the heat to medium-high and bring the mixture to a boil. Then add the mixture into the bowl with the dry ingredients and mix until smooth. Then stir in the egg mixture and mix until combined. Stir in the chopped Oreo cookies. Then pour batter into pan evenly. Bake for about 18 minutes or until toothpick comes out clean when inserted in the center. Let cake cool completely.
For the frosting: Beat the cream cheese, butter, powder sugar and vanilla together until smooth and creamy. Frost the completely cooled cake with frosting and then top with more chopped Oreos.
Then serve. I kept mine in the fridge after the party and it tasted divine this morning when chilled :)
