Crock Pot Hawaiian Meatballs

I saw these on pinterest and thought they looked delicious! I know my husband isn't a huge fan of super sweet dishes so I put off making it for a while. There are days when I make things for dinner that I know my hubby won't love {but he always still eats whatever it is, such a great sport!} but that I can't wait to try.... we call it Shauna's Guilty Pleasure dinner night :) this was one of those things I assumed would be in that category. Boy was I wrong!! I was cutting up my 1 year old's portion and my husband snuck in and took a piece and stopped dead in his tracks and said, "wow! That is REALLY good!". I honestly was shocked :) He fell in love with these and so did I! Super easy and delicious! To make it a little healthier, we chose to use Turkey meatballs instead.

I found the recipe from SixSistersStuff. com (I'm really starting to fall in love with their posts!)

32 oz package precooked, frozen meatballs
13.5 oz can unsweetened pineapple chunks (set juice aside) {I couldn't find a can this size so I got the 20 oz one and it worked just fine}
1 large green pepper, diced
1 cup brown sugar
2 Tblsp. cornstarch
2/3 cup of white vinegar {I only had distilled white vinegar and it worked great!}
2 Tblsp Soy sauce

Place meatballs in the crockpot and top with the diced green pepper and drained pineapple chunks. In a separate bowl mix together the pineapple juice, brown sugar, cornstarch, vinegar and soy sauce. Pour over the meatballs and cook on low for 3-4 hours until heated through.

We served ours with rice.
