Veggie Burgers

I have NEVER had a veggie burger before and was quite impressed with these. My mom and sister said they would add more veggies next time and after reading some reviews I think next time I will add a red pepper in for added flavor. In all, I thought it was a yummy burger patty, especially when I added toppings to it.

2 teaspoons olive oil
1 small onion, grated
2 cloves crushed garlic
2 carrots, shredded
1 small summer squash, shredded (I only had 2 zucchini's so that is all I used)
1 small zucchini, shredded
1 1/2 cups rolled oats
1/4 cup shredded Cheddar cheese
1 egg, beaten
1 tablespoon soy sauce
Packaged bread crumbs (to coat before grilling) {the original recipe called for flour but a lot of reviews recommended bread crumbs and I loved it!}


Heat the olive oil in a skillet over low heat, and cook the onion and garlic for about 5 minutes, until tender. Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat, and mix in oats, cheese, and egg. Stir in soy sauce, transfer the mixture to a bowl, and refrigerate 1 hour.
Preheat the grill for high heat.
Place some bread crumbs on a large plate. Form the vegetable mixture into eight 3 inch round patties. Drop each patty into the crumbs, lightly coating both sides.
Oil the grill grate, and grill patties 5 minutes on each side, or until heated through and nicely browned.

My notes: I only have a SMALL george foreman grill and could only grill 1 patty at a time, so I found it easiest to form one patty at a time and dip it in the crumbs. It was a little difficult at first to keep the patty together and formed but doing it one at a time made it easier for me to keep them together.
I also enjoyed topping my burger with onion, lettuce, tomatoes and turkey bacon. All these toppings added a nice flavor.
