We've been making these burritos for YEARS! It was a Harrah Family Party special actually. We had these so many times and, yet, we never got sick of them. The flavor of the sauce is incredible! My mom usually made extra sauce and poured some inside the burritos as well.
I like that I can make these during the afternoon and keep in the fridge until I'm ready to bake them. Just wait to pour the sauce on top until you bake them.
Ingredients
BURRITOS:
- Santa Fe Lime Rice (recipe below)
- 3 cups cooked, diced (or shedded) chicken
- 1, 15 oz can black beans, drained
- 1 cup shredded Monterey Jack cheese
- 6 burrito-sized flour tortillas
- salt and pepper to taste
SAUCE:
- 1 cup bottled salsa verde
- 1 (0.4 oz) packet buttermilk ranch dressing mix
- 1/3 cup chopped fresh cilantro (optional)
- 1/3 cup sour cream
- 1/3 cup mayo
- 1 tsp minced garlic
- 1/2 tsp coarse salt
- 1Tbsp fresh lime juice
- 1/4 tsp ground cumin
- 1/4 cup sugar
- dash Tabasco (optional, we always omit because we don't do spice)
SANTA FE RICE:
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1/4 tsp salt
- juice of 1/2 lime
- 2 Tbsp butter
- 2 Tbsp chopped fresh cilantro
- 1/4 tsp ground cumin
Directions
- Prepare the rice and keep warm
- Throw all rice ingredients into rice cooker and cook OR throw all ingredients into a 3qt (or bigger) Instant Pot and push the 'Rice' button to cook OR cook on the stove by combining the rice, broth and salt in a large saucepan over medium-high heat. Bring to a boil. Decrease the heat to a simmer and add the lime juice, butter, cilantro and cumin. Stir, cover and simmer 15-20 minutes until rice is tender.
- Make the sauce but adding all ingredients to a blender and blending until smooth.
- Assemble burritos: Divide the chicken among 6 tortillas. Add a scoop of rice and a scoop of black beans to each one. Roll into a burrito and place seam side down in broiler pan or metal pan.
- Pour sauce over all. Sprinkle with cheese
- Place under broiler and broil until the sauce is bubbly. Watch closely as this can go fast!
- Serve with chips and salsa
