Corn bread has its proper place in some meals. Usually it's NOT at our dinner table ;) However, this corn bread recipe is more like a CAKE which DOES have a place at our dinner table LOL!

Ingredients
- 1 1/2 cups, plus 2 Tbsp, all purpose flour
- 2/3 cup sugar
- 1/2 cup white cornmeal
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 1/4 cups milk
- 2 eggs
- 1/3 cup canola oil
- 3 1/2 Tbsp buter, melted
- butter and honey, for serving, optional
Directions
- Preheat the oven to 350 degrees and grease an 8x8 inch baking pan
- Combine the flour, sugar, cornmeal, baking powder and salt in a medium bowl.
- In a small bowl, combine the milk, eggs, oil and butter and mix well. Add to the flour mixture and stir just until blended. Do not overmix.
- Pour the batter into the prepared pan and bake for 35 minutes. The corn bread is done when the edges are lightly browned and a toothpick inserted in the center comes out clean.
- Serve with honey and butter as desired
