These are my favorite dinner rolls. I've made them into crescent rolls as well as into round rolls. Both are great and taste delicious! I've also doubled this recipe many times and have had great success.
This comes from my friend at The Food Nanny.
Ingredients
- 2 Tbsp active dry yeast
- 1 Tbsp sugar
- 1/4 cup plus 1 Tbsp warm water
- 1 cup milk
- 3 eggs
- 1/2 cup sugar
- 1/2 cup canola oil
- about 5 1/2 cups all purpose flour
- 2 tsp salt
- butter
Instructions
- In a small bowl combine the yeast, 1 tbsp sugar and water. Cover and let the mixture stand about 10 minutes.
- Meanwhile, heat the milk in the microwave until warm (I usually heat it about 45 seconds)
- In a large bowl (I use my bosch) beat the eggs, sugar and oil.
- Stir in the milk and yeast mixture. Stir in 5 cups of flour and salt until combined.
- add more flour as needed, to make a moderately soft, still slightly sticky, dough.
- Cover and let rise until it is sticky, about 2-3 hours
- Punch the dough down and turn it onto a lightly floured surface.
- To make them into crescent rolls: Divide the roll into thirds. Roll each third into a cirlce, the size of a dinner plate. Cut into 8 triangles. Starting at the wide end of the triangle roll to a crescent shape. Place onto greased cookie sheet. (3 rows of 8 rolls)
- To make them into round rolls: Weigh the dough and then divide into 24 equal rounds. Pinch and roll the dough to make a nice ball. Place onto a cookie sheet (6 rows of 4 rolls)
- Cover rolls with a kitchen towel and let rise until doubled (about 15 minutes)
- Meanwhile, preheat oven to 400 degrees.
- Bake rolls on bottom rack for 5 minutes; move to the middle rack and bake 5 more minutes, or until rolls are light brown.
- Remove the rolls from the oven and brush the tops with melted butter
