Baked Oatmeal- Peanut Butter Banana

 This was such a quick and easy recipe to throw together and stays fresh in the fridge all week... making it easy for super filling breakfasts on crazy mornings. I LOVE to reheat this and top with some homemade peach strawberry jam (PB&J oatmeal anyone?!!!) Seriously, SO DANG GOOD!!!

Ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 cups preferred milk (I use lactose free Whole milk)
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1/4 cup natural peanut butter
  • 4 very ripe bananas
  • OPTIONAL: 1/4 cup maple syrup, if you prefer a more sweeter oatmeal
Instructions
  1. Preheat oven to 350 degrees and grease an 8x8 inch pan
  2. Combine the rolled oats, baking powder, cinnamon, and salt in a large bowl.
  3. Next, add the milk, egg, vanilla, peanut butter, and maple syrup (if using). Stir to combine.
  4. Mash two of the bananas and fold them into the mixture. Slice the remaining two bananas into quarter inch slices.
  5. Place half of the sliced bananas across the bottom of the prepared dish. Spread half of the oatmeal mixture over the banana slices. Evenly distribute the remaining banana slices over the oatmeal layer. Pour remaining oatmeal over the second layer of sliced bananas and spread evenly.
  6. Place in oven and bake for 35-40 minutes until toothpick inserted comes out clean.
  7. To serve, top with a drizzle of peanut butter and more banana slices if desired (and some homemade jam if you are up for the best breakfast ever!)
