Quick Chicken Cordon Blue

I got this recipe from my sister Amy after eating it at her house one day. After looking over the recipe I couldn't believe how easy it was! It tasted like it had taken all day to cook! This is super easy and tastes really good!!


1 box Stove Top Stuffing mix
2 Tbsp. Butter
3/4 pound lean low sodium ham slices
1 cup shredded Swiss cheese
3/4 pound sliced, diced or shredded cooked chicken or turkey
2 cups sauce (recipe below)

Preheat oven to 425 degrees.
Bring 1 ½ cups water to a boil and stir in butter and stuffing mix; remove from heat, cover and allow stuffing to stand 5 min.
Spray 9x13 pan with non-stick spray. Layer ham slices in bottom of pan; sprinkle with shredded cheese; arrange chicken over cheese. Spread prepared stuffing over chicken. Bake 20-30 min or until heated through and stuffing is browned on top.

Sauce:
Whisk together 1 can Cream of Chicken soup, 2/3 cup sour cream, and 1-3 tsp lemon juice. Add 2-4 Tbsp. Milk to desired consistency. Heat sauce before serving.
