Eclair Dessert

One day at work, I was asking around for a simple dessert. My lead teller at the time said she had this recipe for an eclair cake that was easy and loved by all. She knew the recipe by heart and I quickly wrote it down and went home and tried it. It was FANTASTIC!!!! I made it for family party and my father-in-law raved about it :) It is soooooooo good!!!!!

2 small packages Instant vanilla pudding
3 ½ cups milk
Graham crackers
Large tub cool whip
Chocolate Frosting

Mix milk and pudding together, let sit for few minutes to thicken. Then gently fold in cool whip. In 9x13 pan, place a layer of graham crackers on bottom of pan. Pour half pudding mixture over it then layer another layer of graham crackers, then pudding mixture then top with final layer of graham crackers. Place in fridge and let set for a couple hours, then ice with chocolate frosting.
