Creamy Baked Spaghetti

Oh my goodness! This was YUMMY!!! and to top it all off, it was SUPER easy!! I love meals like this one, where you can make it in the morning when you actually have some time to do something and put it in the fridge for later. And that is exactly what I did. I was having a full house and was going to be occupied watching my little sister (7)and 2 nephews (5 and 6 months) plus my own 2 girls during dinner time, so I was glad to have the option to make this ahead!
This is a wonderful spaghetti dish and a great way to sneak a few veggies into the meal. It was gobbled up by all the kids and me! This is a family friendly, quick and easy meal. What more could you ask for?!

8 ounces uncooked spaghetti {I used 12 oz}
1 pound ground beef
1 large jar spaghetti sauce (26.5 ounces)
1 tablespoon butter
1/2 cup chopped green peppers {I didn't measure, I just used an average sized green pepper}
1/3 cup chopped onions {I used about 1/2 a medium onion}
8 ounces cream cheese, softened
2 tablespoons milk
Fresh grated Parmesan cheese
Mozzarella cheese
French Fried Onions (small can)

Cook spaghetti according to directions on the package. Cook to al dente, drain and set aside.
Brown ground beef. Drain grease, then add spaghetti sauce to meat and heat.
Combine onions, peppers and butter in small microwaveable bowl. Cover and microwave 4 minutes on HIGH until soft.
Add cream cheese and milk to vegetables and stir well.
Using a 9x13 dish, assemble in the following order:
Thin layer of spaghetti sauce on the bottom of the casserole dish.
Spaghetti
Cream cheese/vegetable mixture
Spaghetti sauce
Parmesan Cheese (amount subject to your own taste)
Then top with some Mozzarella cheese
French Fried Onions (added during last 5 minutes of cooking)
Bake at 350 degrees for 25 minutes. Top with French Fried onion and continue baking 5 more minutes. (This is the secret ingredient–don’t let them burn.)


If you want to make this ahead of time and refrigerate or freeze, then make it without the French Fried onions, but don’t forget to add them 5 minutes before casserole is finished cooking.
