I found this recipe on a relief society handout and held on to it because it sounded good. A few years later I finally got around to making them and wished I would have made them earlier! They are super moist and super soft cupcakes! They were simply amazing! I even used a chocolate cake mix with whole eggs my second time around and they tasted just as amazing! I'm thinking you could change it up with any flavor of cupcake and get some great cupcakes each time!
8 oz cream cheese (softened)
2 egg whites
1/4 cup vegetable oil
1 box white cake mix
1 cup water
1 tsp vanilla
Preheat oven to 350. In large bowl combine cream cheese, egg whites, and vegetable oil. Using a hand mixer beat the ingredients until combined and creamy. Add the cake mix, water and vanilla and mix until smooth (about 3 minutes). Fill muffin tins just below the rim and bake 18-20 minutes (til puffed and golden).
