I found this recipe on Pinterest and couldn't wait to try it! It was super easy and so fluffy and flavorful! I loved the banana flavor the cake had plus the cream cheese inside was divine! I'm thinking it could be used in so many places. Try this, you won't be disappointed.
I know people are afraid of cake rolls because they don't come out of the pan and tear. I've been there and with this cake, it is so fluffy and comes RIGHT out of the pan, no problems! (I've made it twice with no problems) Always make sure you spray your pan like crazy too!
1 cup cake flour (I have never bought cake flour before and found a great help for this and this is what I have used both times... put 2 Tbsp corn starch in a 1 cup measuring cup then fill remaining with flour= 1 cup cake flour)
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
2 eggs
3/4 cup sugar
1 medium banana mashed
1 tsp vanilla
1 tsp lemon peel
3 egg whites
Powder sugar to sprinkle on towel to prevent sticking
Combine dry ingredients and set aside.
Beat eggs for 5 min and then add 1/2 cup sugar, banana, vanilla and lemon peel.
In separate bowl, beat egg whites on medium until soft peaks form. Then gradually beat in 1/4 cup sugar one tablespoon at a time on high until stiff peaks form.
Add lour mix to banana mix and mix gently til combined. Then fold egg white mixture in and pour into WELL GREASED jelly roll pan. Bake at 375 for 10-12 min, until cake spring backs.
Let cool about 10 minutes in pan while you prepare a clean dish towel (or terry cloth) with sprinkled powder sugar. Then turn cake onto towel and roll up starting at a short end. Place on cooling rack to let cool completely while you prepare the filling.
Filling:
4 oz cream cheese softened
1/2 cup packed brown sugar
1/2 tsp vanilla extract
1 cup cool whip
Beat cream cheese and brown sugar together until smooth. Then add vanilla until well mixed. then fold in the cool whip. Place on cooled Banana roll and roll back up. Drizzle caramel icecream topping on top and serve.
Personally, I like it best when it is chilled. So good!!
