My mom is an amazing cook!! We grew up eating such yummy things! This is another one of her famous meals! This is the meatloaf we grew up eating, and it is sooooooo easy!! I always think of eating this with my family on a Sunday after church with mashed potatoes and green beans or corn and a roll. YUMMMMY!!!!!
I took this recipe to college as well and 4 out of the 6 girls I lived with HAD NEVER EATEN MEATLOAF!! I was shocked! they teased that it sounded disgusting and I told them they didn't know what they were talking about. They all LOVED this dish!! Probably the best meatloaf I have ever eaten :) Bold statement eh?! Try it and see for yourself!!!
2 lbs hamburger
2 eggs
Onion (dry or fresh)
2 8 oz cans tomato sauce
1 Tbsp mustard
½ cup oatmeal
½ cup Karo syrup
2 Tablespoons brown sugar
In big bowl take raw meat and add to it: 2 eggs, salt and pepper to taste, a little garlic seasoning, the onion (about ¼ a cup) and the oatmeal. Mix together with hand until well mixed.
In another bowl take the tomato sauce and add the mustard, karo syrup and brown sugar and mix all together. Take ½ this mixture and add to meat and mix together again. Then place in a 9x13 pan and form into a “ring” shape with a whole in the middle.(My mom says this way it cooks more evenly.... I personally have only made it in a ring shape, never a loaf, but I'm sure you could put it in a loaf pan as well) Then top with the remaining tomato sauce mixture. Bake at 375 degrees for about and hour or an hour and 10 minutes. Let it sit about 10 minutes before cutting into.
