I found this recipe HERE and couldn't wait to try it! My husband and I really REALLY liked these! Great flavor and I loved that it cooked all day in the crockpot!
I did follow some comments left on the post and adapted it slightly
1 envelope Taco Seasoning
6 pieces Boneless, Skinless Chicken Breasts
1 16-ounce jar Salsa
1 (8oz) pkg cream cheese
optional toppings: Lettuce, tomatoes, guacamole, sour cream, shredded cheese
Stir salsa and taco seasoning together. Place chicken in the crock pot and pour Salsa mixture over top. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork. Mix in cream cheese right before serving and let heat through.
For tacos, serve the chicken with soft flour tortillas, guacamole, lettuce, shredded cheese and sour cream. This is very versatile and can be used for enchiladas, nachos, tostadas, quesadillas, etc.
