Banana Cookies

My husband LOVEs this cake. He loves to eat it for breakfast with a huge bowl of milk. Since he loves the cake so much I'm always on the look out for other banana flavored stuff. I tried a banana cookie hoping it would be just as good but it wasn't and I was disappointed. Then I came across this wonderful recipe and fell in love! Personally, I think it tastes pretty close to the hubby's favorite cake but in bitesize, easy grab form! So great! Try them, they are so easy and taste delicious!! Recipe from: Chef N Training 1 1/2 cups flour 1 cup sugar 1/2 tsp Baking Soda 1/2 tsp salt 1/4 tsp nutmeg 3/4 tsp cinnamon 3/4 cup shortening 2 bananas-mashed 1 egg 1 3/4 cup quick oats Preheat oven to 400. Stir dry ingredients together, then cut in shortening. After shortening is completely cut in, add bananas, eggs, and oats and stir together well. Spoon drops onto cookie sheet and bake at 400 F for 8-10 minutes (Note: this is a lot softer than normal cookie dough and will not form balls, hence spoon “drops”) FROSTING 1/2 cup (1 stick) butter, softened 3 Tbsp. milk 2 tsp. vanilla 1 box (16 oz.) powdered sugar You can add more milk or powdered sugar to get it to the consistency you want
