One of our favorite places to eat is Panda Express. I love to find recipes to replicate at home. We have a favorite Sweet and Sour chicken recipe, ham fried rice recipe, black pepper chicken recipe and now this vegetable lo mein recipe. Who needs to go out to eat anymore?!
I love how easy this is to make and all the veggies that are loaded into it.

Ingredients
- 8 oz lo mein noodles
- 8 oz mushrooms, chopped
- 1 cup broccoli florets, chopped
- 1 large carrot, cut into thin strands
- 1/2 red pepper, sliced into thin strands
- 3 garlic cloves, minced
- 1 Tbsp ginger, grated (I usually just use a dash of ground ginger instead)
- 2 Tbsp green onion, chopped
- 1 Tbsp oil, for sauteing
- 2 Tbsp butter, for sauteing
For the Sauce:
- 1 tsp sesame oil
- 3 Tbsp honey
- 1/2 tsp sriracha or hot sauce, optional (we usually leave it out)
- 1/4 cup low-sodium soy sauce
- 1/3 cup chicken broth
- 1 tsp cornstarch
Instructions
- Cook lo mein noodles according to package directions, drain, cover and set aside to keep warm
- In a large skillet, over med/high heat, saute mushrooms, broccoli, carrots and peppers with oil and butter until fully cooked.
- In a bowl, combine all the ingredients for the sauce.
- Once the vegetables are cooked, add the minced garlic and ginger and cook until fragrant.
- Add the lo mein noodles into the vegetables and pour in the sauce.
- Mix and cook until noodles are reheated.
- Stir in green onion and enjoy!
