Vegetable Lo Mein

 One of our favorite places to eat is Panda Express. I love to find recipes to replicate at home. We have a favorite Sweet and Sour chicken recipe, ham fried rice recipe, black pepper chicken recipe and now this vegetable lo mein recipe. Who needs to go out to eat anymore?! 

I love how easy this is to make and all the veggies that are loaded into it.

Ingredients

  • 8 oz lo mein noodles 
  • 8 oz mushrooms, chopped
  • 1 cup broccoli florets, chopped
  • 1 large carrot, cut into thin strands
  • 1/2 red pepper, sliced into thin strands
  • 3 garlic cloves, minced
  • 1 Tbsp ginger, grated (I usually just use a dash of ground ginger instead)
  • 2 Tbsp green onion, chopped
  • 1 Tbsp oil, for sauteing
  • 2 Tbsp butter, for sauteing
For the Sauce:
  • 1 tsp sesame oil
  • 3 Tbsp honey
  • 1/2 tsp sriracha or hot sauce, optional (we usually leave it out)
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup chicken broth
  • 1 tsp cornstarch
Instructions
  1. Cook lo mein noodles according to package directions, drain, cover and set aside to keep warm
  2. In a large skillet, over med/high heat, saute mushrooms, broccoli, carrots and peppers with oil and butter until fully cooked.
  3. In a bowl, combine all the ingredients for the sauce.
  4. Once the vegetables are cooked, add the minced garlic and ginger and cook until fragrant.
  5. Add the lo mein noodles into the vegetables and pour in the sauce.
  6. Mix and cook until noodles are reheated.
  7. Stir in green onion and enjoy!
