Vanilla Granola

 I'm not even sure what got me searching for granola but I did and I am so glad I did! I didn't know how much my older girls would love yogurt parfaits topped with this amazing granola. They have taken parfaits for lunch MULTIPLE times now. My mom also raved about it. And as a bonus... it makes your kitchen smell HEAVENLY while it bakes.

Ingredients:

2 cups rolled oats

2 cups chopped nuts (walnuts, almonds or pecans)

1 tsp cinnamon

1/4 cup coconut oil

1/3 cup honey

1 Tbsp vanilla

Preheat oven to 300 degrees and line baking sheet with parchment paper. In a large mixing bowl add your dry ingredients and mix together. In a small microwavable bowl, add your coconut oil and heat in microwave about 1 minute until melted. Add honey and whisk together. Microwave another 30 seconds. Add vanilla and mix well. Pour wet ingredients over dry ingredients and mix until all covered entirely. Pour granola onto prepared pan into an even layer. Bake for 25-30 minutes until edges are lightly browned (it will get crunchier while it cools).

Let it cool entirely before breaking into pieces and storing in an airtight container.
