Tuna Noodle Casserole

 Not everyone loves a Tuna Casserole. But this one... it usually is a hit with everyone!

Ingredients

  • 3 cups uncooked egg noodles (or other pasta)
  • 1, 10.75 oz, can cream of mushroom soup
  • 1/2 cup sour cream
  • 1/3-1/2 cup milk
  • 1/2 cup mayo
  • 2 (6 oz) cans chunk light tuna, drained
  • 1, 15 oz, can corn drained, or 1 cup frozen peas
  • 2 cups shredded cheddar cheese, divided
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp lemon juice
    TOPPING:
  • 3/4 cup soft white or wheat bread, plus 1 Tbsp butter, melted
  • OR 3/4 cup crushed potato chips
  • OR 3/4 cup french fried onions
Directions
  1. Preheat the oven to 350 degrees and grease a 9x13 baking dish
  2. Cook the noodles according to package directions
  3. Meanwhile, heat the soup, sour cream, milk and mayo in a medium saucepan over low heat. Stir to combine. Mix in the tuna, corn or peas, 1 cup of the cheese, salt and pepper and lemon juice. Stir until heated through.
  4. Add the drained noodles into tuna mixture. Mix and pour into prepared baking dish.
  5. Bake for 20 minutes. 
  6. Sprinkle remaining 1 up of cheese over top and then add topping of your choice (bread crumbs, potato chips, french fried onions)
  7. Bake 10-15 more minutes.
