I found this gem on an Instagram post and have made it multiple times. It is a family favorite! I have made this in both my Instant Pot and my Crock pot and they both work great. I am just a huge fan of the Instant Pot so I tend to reach for that one more often. But use whatever your heart desires :)
Ingredients:
- 8 cups russet potatoes, peeled and diced
- 1 yellow onion, diced
- 2 large carrots, peeled and chopped
- 1/2 cup chopped celery
- 16 oz cubed ham
- 1 tsp salt
- 1/4 tsp fresh black pepper
- 1/4 cup flour
- 4 cups chicken broth
- 1 1/2 cups heavy cream
- 1/2 cup sour cream
Slow cooker Instructions:
- Add the potatoes, onion, carrot, celery, ham salt, pepper, chicken broth to your slow cooker and cook on low for 7-8 hours, or high for 4-5 hours.
- Add the flour, heavy cream, and sour cream and stir everything together
- Cover and cook on high for an additional 15 minutes
For the Instant Pot:
- Add everything to a 6 qt instant pot and cook on high pressure for 6 minutes. Let it naturally release for about 5 minutes before doing a quick release.
- Turn on the Saute function and add the flour, cream and sour cream and stir together to thicken. Stir constantly to avoid it from sticking to the bottom.
