Ham and Potato Soup


 I found this gem on an Instagram post and have made it multiple times. It is a family favorite! I have made this in both my Instant Pot and my Crock pot and they both work great. I am just a huge fan of the Instant Pot so I tend to reach for that one more often. But use whatever your heart desires :)

Ingredients:

  • 8 cups russet potatoes, peeled and diced
  • 1 yellow onion, diced
  • 2 large carrots, peeled and chopped
  • 1/2 cup chopped celery
  • 16 oz cubed ham
  • 1 tsp salt
  • 1/4 tsp fresh black pepper
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup sour cream
Slow cooker Instructions:
  1. Add the potatoes, onion, carrot, celery, ham salt, pepper, chicken broth to your slow cooker and cook on low for 7-8 hours, or high for 4-5 hours.
  2. Add the flour, heavy cream, and sour cream and stir everything together
  3. Cover and cook on high for an additional 15 minutes
For the Instant Pot:
  1. Add everything to a 6 qt instant pot and cook on high pressure for 6 minutes. Let it naturally release for about 5 minutes before doing a quick release.
  2. Turn on the Saute function and add the flour, cream and sour cream and stir together to thicken. Stir constantly to avoid it from sticking to the bottom.
