Maybe this doesn't NEED an official post but I have now made these multiple times and I don't want to forget it so it's getting a spot on the blog. I absolutely loved the variety of veggies in here as well as the seasonings. These make an excellent side dish to almost every meal.

Ingredients
- 2 Cups broccoli florets
- 2 cups cauliflower florets
- 2 cups sliced baby portobello mushrooms
- 1 cup thin baby carrots (essential to be thin so they cook through with the rest of the veggies... learn from my mistake on this one!)
- 1 red bell pepper chopped
- 1 small yellow onion cut into chunks
- 2 Tbsp olive oil
- Salt and Pepper to taste
- 1 1/2 tsp Italian Seasoning
- 1/2 tsp garlic powder
- grated parmesan cheese, optional
- chopped fresh parsley, optional
Instructions
- Preheat oven to 425 degrees
- Line a large baking sheet with foil or parchment paper
- add all the vegetables to the baking sheet
- add olive oil and seasonings and mix (can use hands if needed)
- Arrange into single layer on pan
- bake 15-20 minutes, stirring half way. You want them fork tender and lightly browned
- remove from oven and garnish with cheese and parsley as desired (the cheese is a MUST in my opinion!)
