Easy Oven Roasted Veggies

 Maybe this doesn't NEED an official post but I have now made these multiple times and I don't want to forget it so it's getting a spot on the blog. I absolutely loved the variety of veggies in here as well as the seasonings. These make an excellent side dish to almost every meal.

Ingredients

  • 2 Cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups sliced baby portobello mushrooms
  • 1 cup thin baby carrots (essential to be thin so they cook through with the rest of the veggies... learn from my mistake on this one!)
  • 1 red bell pepper chopped
  • 1 small yellow onion cut into chunks 
  • 2 Tbsp olive oil
  • Salt and Pepper to taste
  • 1 1/2 tsp Italian Seasoning
  • 1/2 tsp garlic powder
  • grated parmesan cheese, optional
  • chopped fresh parsley, optional


Instructions

  • Preheat oven to 425 degrees
  • Line a large baking sheet with foil or parchment paper
  • add all the vegetables to the baking sheet
  • add olive oil and seasonings and mix (can use hands if needed)
  • Arrange into single layer on pan
  • bake 15-20 minutes, stirring half way. You want them fork tender and lightly browned
  • remove from oven and garnish with cheese and parsley as desired (the cheese is a MUST in my opinion!)
