Vegetable stir Fry


This stir fry is so easy, it's healthy and tastes delicious!! I found this from the 21 Day Fix guide book

1 cup diced asparagus
1 cup diced carrots
1 cup diced red peppers
1 cup diced onion
4 tsp EVOO
Salt and pepper
Garlic

Heat up oil in pan, add in diced veggies and seasoning and sauté until mostly cooked ( a little crunch is yummy!) 

I toss this with some seasoned chicken and rice or quinoa and it is so filling and yummy!!
