This is a GREAT meal! It is SOOOO easy because it cooks in the crock pot ALL day (8 hours!) and the only thing you have to do before eating it is make rice.... super quick and was soo delicious!! I loved the flavors in this dish and recommend it to all!

1.5 lb chicken breasts
1 16 oz jar Salsa
1 15 oz can black beans, drained
8 oz frozen corn
1 Tbsp chili powder
1/2 Tbsp cumin
1/2 Tbsp Minced garlic
1/2 tsp dried oregano
1/4 tsp cayenne pepper (I omitted this)
1/4 tsp salt
pepper to taste
2 cups dry rice
8 oz cheddar cheese, shredded
cilantro (optional)
Mix everything except the rice, cheese, and cilantro together in a bowl. Place chicken in crock pot and top with mixed ingredients. Cover and cook on low 8 hours. After 8 hours, use two forks and shred the chicken and give everything a good stir. Cook rice towards the end of chicken cooking time. Serve by placing rice in bowl and top with chicken mixture and some cheese. (I added a little sour cream and thought it gave it a nice creaminess but is optional)
