Homemade Syrup

Ok, this is by far the BEST syrup I have ever had!! When I was in college we had some friends who started Pancake Thursday, which was a night where we would all get together and eat pancakes {go figure eh?!} and watch "The Office". I was introduced to 3 amazing things here: 1) the office :) 2) chocolate chips placed in pancake batter... what?! SO AMAZING! and 3) this syrup! which I think brought me back each week! It is so easy and just makes those pancakes that much better! Thanks to my friend KariLynn who shared this recipe with me after all those pancake thursdays!


1 cup buttermilk
1 cup butter
2 cups sugar
2 Tbsp Karo Syrup
Bring above ingredients to a boil over stove top and boil for 5 minutes stirring frequently. Then remove from heat and add:
1 tsp baking soda**
1 tsp vanilla
**NOTE: the baking soda does make this syrup expand and foam quite a bit so make sure you take that to account and use a large enough pot
Serve over pancakes or waffles. {The best ones are when you add chocolate chips to the batter…. So yummy!!!}
