These are super easy to put together and taste so yummy!!! These are great with some rice and a salad or veggie.
1 lb. diced cooked chicken
1 large tub sour cream (16 oz)
1 lb Colby jack cheese
diced olives
1 small can diced green chilies
1 soup can of milk
2 cans cream of chicken soup
flour tortillas
Mix all ingredients together, except for the chicken. (use as much or as little of the green chilies as desired, the more you have the spicier it will be) Spread a tiny bit of soup mixture on the bottom of a 9x13 pan. Fill tortilla shells with chicken and soup mixture. Roll up and put in dish. Pour remaining sauce over top the enchiladas. Top with more cheese and olives. Bake at 350 for 35-40 minutes.
